Mexican Rice

INGREDIENTS:

  • 3 tablespoons vegetable oil
  • 1 cup long grain uncooked rice
  • 1 teaspoon minced garlic
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon cumin
  • 1/2 cup tomato sauce
  • 14 oz chicken broth
  • 3 tablespoons finely chopped cilantro

DIRECTIONS

  1. Heat oil in saucepan on medium heat
  2. Add rice and cook until lightly brown (few minutes)
  3. Add garlic, cumin and salt and cook until lightly brown
  4. Add tomatoe sauce and chicken broth
  5. Bring to boil
  6. Reduce heat to low, cover and cook 25 minutes
  7. Fluff with fork, add in cilantro and serve.
