Chicken Rice Soup (Nonny)

INGREDIENTS:

  • 3 Tbsp Olive Oil
  • 1 Large Onion (diced)
  • 2 Large Carrots (peeled & chopped)
  • 2 Celery Stalks
  • 4 Cloves Garlic (minced)
  • 1/2 Cup Brown Rice
  • 1 tsp Italian Seasoning
  • 1 tsp Basil
  • 1 tsp Oregano
  • 1/2 tsp Salt
  • 1LB Chicken (chopped)
  • 4 Cups Chicken Broth (low sodium)

DIRECTIONS:

  1. Soak Rice in Water
  2. Saute oil & vegetables in LARGE pan for 10 minutes or until soft.
  3. Drain rice & add to vegetables and cook for 2-3 minutes.
  4. Mix in remaining seasonings into pan.
  5. Move to crock pot and add raw chopped chicken and broth
  6. Cook 6 hours on low
