Tomato Basil Soup

INGREDIENTS:

  • 3 TBSP Minced Onion
  • 3/4 stick butter
  • Two 14.5-ounce cans diced tomatoes ( pureed until VERY smooth)
  • One 46-ounce bottle or can tomato juice
  • 4 TBSP sugar
  • 1 or 2 TBSP chicken base, or 3 chicken bouillon cubes
  • 30 Twists – Freshly ground black pepper
  • 1 1/2 cups heavy cream
  • 1/8 cup chopped fresh basil
  • 1/8 cup chopped flat-leaf parsley

DIRECTIONS #1:

  1. Melt the butter in a large pot or crock pot.
  2. Add onion and cook until translucent.
  3. ADD THE FOLLOWING TO POT:
    1. Pureed tomatoes
    2. Tomato juice. 
    3. 4 tablespoons of sugar.
    4. 3 chicken bouillon cubes.
    5. freshly ground black pepper. 

DIRECTIONS #2:

  1. Stir to combine, then heat ALMOST to a boil. Then turn off the heat.
  2. Stir in the cream. Add the basil and parsley and stir.
  3. Simmer for 5 minutes. Serve Warm.
