Spaghetti & Meatballs (Nonny)

INGREDIENTS (SAUCE):

  • 1 TBSP oil
  • 1/4 cup chopped green pepper
  • 1/4 cup chopped onion (or 2 TBSP minced onion spice)
  • 2 gloves garlic (1 tsp minced)
  • 24oz tomato paste (2, 12 oz cans)
  • 45oz tomato sauce (2-3, 15oz cans)
  • 24oz water (2, 12oz cans)
  • 1 tsp oregano
  • 1 tsp parsley flakes
  • 1 tsp sugar
  • 1/2 tsp basil flakes
  • dash crushed red pepper (optional)
  • 1LB hot Italian sausage

INGREDIENTS (MEATBALLS):

  • 1LB ground beef
  • 3/4 cup season bread crumbs (italian)
  • 1 egg
  • 1/2 cup milk
  • 1/4 cup chopped onion (or 1T minced onion spice)
  • 1 tsp A1 or Worcester Sauce
  • Dash of garlic salt, pepper & salt

DIRECTIONS:

  1. In a large sauce pot, heat oil on medium heat.
  2. Saute onions, green peppers & garlic for 2-3 minutes. (then remove from heat)
  3. Add tomato sauce, paste, water & all seasonings, bring to boil.
  4. Reduce heat and simmer for 1-hour minimum
  5. Add sausage and simmer for 1-hour (can extend as long as wanted)
  6. Toward the end of sausage 1-hour of simmering.
  7. Mix all meatball ingredients together
  8. Form into small balls and drop carefully into sauce around sausage
  9. Start pasta water
  10. Cook sauce for 1-hour minimum (don’t stir for 15 minutes to allow to form)
  11. Put pasta in boiling water (use 1-2 tsp oil and have PLENTY of space around pasta)
  12. Strain pasta, return to pot or serving dish, mix in small amount of sauce in pasta to prevent sticking

PROPOSED TIMELINE FOR 6:00 DINNER:

  • 1:00 – Begin cutting up vegetables & heating oil & saute vegetables
  • 1:15 – Add all other sauce ingredients & bring to boil
  • 1:30 – Reduce heat and simmer for 1-1/2 hours
  • 3:00 – Add sausage & simmer 1-1/2 hours
  • 4:15 – Make meatballs
  • 4:30 – Add meatballs to sauce & simmer 1 hour
  • 4:30 – Start pasta water
  • 5:15 – Start cooking pasta
  • 5:30 – Done and can leave lid cracked to boil off some water to thicken
  • 6:00 – ENJOY!
