Meatloaf (Sheryl)

INGREDIENTS:

LOAF INGREDIENTS

  • 1-1/2 to 2 lbs ground beef
  • 2 eggs
  • 3/4 cup plain bread crumbs
  • 2 Tbsp minced onions
  • 3/4 cup ketchup
  • 2 tsp mustard
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • 1/8 tsp red pepper

TOPPING INGREDIENTS

  • 1/4 cup ketchup
  • 1/2 tsp mustard
  • 2 tsp brown sugar (heaping)

DIRECTIONS:

  1. Preheat oven to 400
  2. Combine all loaf ingredients into large mixing bowl
  3. Combine 3 topping ingredients into a small bowl
  4. Grease meatloaf dish & add loaf mixture
  5. Carve long groove in top of loaf with finger
  6. Drizzle topping mixture into groove & spread slightly over entire loaf
  7. Cook uncovered for 60 minutes (if 2 lbs meat, cook 70 minutes)
