Zuppo Toscano Soup (Tina)

INGREDIENTS:

  • 14oz package of smoked sausage into 1/4 chunks
  • 1/2 cup chopped onion
  • 1-1/2 teaspoons – minced garlic
  • 1 tall spice jar – hormel bacon bits (or 1/2 package bacon cooked/crumbled)
  • 2 shakes – crushed red pepper
  • 5 cups – water
  • 4 chicken bouillon cubes (small cubes)
  • 1/3+ cup – heavy whipping cream
  • 2 – potatoes cut into 1/4” cubes
  • 2 cups – kale, washed, dried, and shredded

DIRECTIONS:

  1. Fry sausage in pan
  2. Remove sausage and fry onion and garlic in grease
  3. Add water, cream & chicken bouillon cubes (dissolve a bit)
  4. Add potatoes, kale & sausage & bacon
  5. Bring to boil.
  6. Reduce heat, cook 30 minutes or until potatoes are soft.
